Who are we?

 

Claudine and Oliver Nyaguy, a dynamic couple from Switzerland, have realized their passion for good and healthy food in Apulia. As former health professionals, they know exactly what it means to strengthen body and mind through nutrition. They combine their expertise in health and their love of Mediterranean cuisine in a lifestyle that harmonizes pleasure and well-being. In Puglia, they live out their passion every day by transforming local, fresh ingredients into delicious and nutritious dishes.

    Course location: Villa Lido, Lido Marini/Salve

    Welcome to a unique culinary experience in the heart of Salento, a region known for its Mediterranean cuisine and rich traditions. You will stay at the luxurious 5-star Masseria Baroni di Montesardo and take part in an intensive cooking course at the picturesque Villa Lido. Each day is dedicated to a specific culinary theme, immersing you in the food culture of Salento. A maximum of 8-10 participants makes this cooking course individual and exclusive with a high learning potential.

    Day 1: Arrival and check-in at the Masseria Baroni di Montesardo

    Afternoon:

    Arrival: check-in and welcome at the exclusive Masseria Baroni di Montesardo. You will be introduced to the historic charm of this luxurious accommodation.

    Welcome cocktail: Meet your hosts and fellow participants over an aperitivo in the beautiful courtyard of the masseria.

    Welcome dinner at the Villa Lido: Enjoy a traditional dinner prepared by a local chef to give you a first taste of Salentine cuisine.

     

    Day 2: Pasta - orecchiette and typical pasta dishes

    Location: Villa Lido

    Morning:

    Transfer to Villa Lido: after breakfast at the masseria, you will drive to Villa Lido, the beautiful location of the cooking course.

    Theoretical introduction: introduction to the history and techniques of orecchiette and other typical Salento pasta.

    Afternoon:

    Practical workshop: Making orecchiette, home made ravioli and other regional pasta shapes. Preparation of the accompanying sauces, such as tomato sauce with basil or Ragu alla Salentina.

    Tasting: Enjoy the freshly made pasta over lunch at the villa.

    Evening:

    Return to the masseria: free time to relax or explore the surrounding area.

     

     

    Day 3: Seafood - pulpo, mussels and more

    Location: Villa Lido

    Morning:

    Transfer to Villa Lido: After breakfast, drive to Villa Lido.

    Excursion: Visit to a local fish market to select fresh pulpo, mussels and other seafood.

    Theoretical introduction: introduction to the preparation of seafood in Salentine cuisine, with a focus on pulpo and mussels.

    Afternoon:

    Practical workshop: Preparation of “Polpo alla Pignata”, “Cozze alla Tarantina” and other typical seafood dishes.

    Tasting: Enjoy the prepared dishes over lunch at the villa.

    Evening:

    Return to the masseria: free time to relax.

     

    Day 4: Pizza and bread - Focaccia Barese, Panzerotti

    Location: Villa Lido

    Morning:

    Transfer to Villa Lido: after breakfast, drive to Villa Lido.

    Theoretical introduction: Learn the basics of baking bread and making pizza. Discuss the different types of dough and fermentation processes.

    Afternoon:

    Practical workshop: Preparation of Focaccia Barese, Panzerotti and Pizza Napoletana. Baking and shaping with different ingredients.

    Tasting: Enjoy the baked delicacies over lunch together.

    Evening:

    Return to the masseria: free time to relax at the masseria.

     

    Day 5: Fish - sea bass in a salt crust and baccalà

    Location: Villa Lido

    Morning:

    Transfer to Villa Lido: After breakfast, drive to Villa Lido.

    Theoretical introduction: In-depth study of the traditional fish dishes of Salento, with a focus on the preparation of sea bass in a salt crust and baccalà alla Salentina.

    Afternoon:

    Practical workshop: Preparation of these fish dishes under expert guidance.

    Tasting: Lunch together with the prepared fish dishes.

    Evening:

    Return to the Masseria: free time to relax or an optional evening walk.

     

    Day 6: Special and typical dishes from Salento

    Location: Villa Lido

    Morning:

    Transfer to Villa Lido: After breakfast, drive to Villa Lido.

    Theoretical introduction: delve into the typical and special dishes of Salento, such as “Ciceri e Tria”, “Pittule”, “Parmigiana di Melanzane” and “Pasticciotto”.

    Afternoon:

    Practical workshop: Preparation of these dishes under the guidance of a local chef.

    Final dinner: Enjoy a festive final dinner where all the dishes learned during the course will be served. You will receive a certificate of participation and a culinary gift as a souvenir.

    Evening:

    Return to the masseria: last night at the masseria, enjoy the atmosphere.

     

    Day 7: Departure

    Morning:

    Breakfast: one last breakfast together at the masseria.

    Check-out and departure: Farewell and individual departure.
